Ingredients
- 1 lb 93% lean ground turkey, browned
- 2 medium sweet potatoes, peeled and diced small
- 1/2 cup diced onions
- 4 eggs (cracked on top before finishing)
Instructions
- 1Preheat oven to 400°F (200°C). Toss the sweet potatoes and onions in a little olive oil and roast for 25 minutes.
- 2Remove from oven, stir in the cooked ground turkey.
- 3Make 4 small wells in the mixture and crack an egg into each well.
- 4Return to the oven for 10-15 minutes until the eggs reach your desired doneness.
