Ingredients
- 1 medium eggplant, peeled and cubed
- 1/2 cup low-fat ricotta cheese
- 1/2 cup marinara sauce
- 1 egg white (mixed into the ricotta)
Instructions
- 1Preheat oven to 400°F (200°C). Roast the eggplant cubes for 15 minutes until soft.
- 2Mix the ricotta cheese with the egg white.
- 3In a baking dish, fold the roasted eggplant, marinara, and ricotta mixture together. Bake for 20 minutes.
