Ingredients
- 6 eggs
- 1 cup asparagus spears, chopped into 1-inch pieces
- 1/4 cup crumbled feta cheese
- 1 tsp olive oil
Instructions
- 1Preheat oven to 375°F (190°C). In an oven-safe skillet, sauté the asparagus in olive oil for 3 minutes.
- 2Whisk the eggs and pour them over the asparagus in the skillet. Sprinkle with feta.
- 3Cook on the stove for 2 minutes until the edges set, then transfer to the oven and bake for 12-15 minutes.
