Ingredients

  • 4 whole eggs
  • 1/2 cup monk fruit sweetener (granulated)
  • 1/2 cup fresh lemon juice & 1 tbsp lemon zest
  • 1 tbsp coconut flour

Instructions

  1. 1Preheat oven to 350°F (175°C). Whisk the eggs, monk fruit, lemon juice, zest, and coconut flour until smooth.
  2. 2Pour into a greased 8x8 baking dish.
  3. 3Bake for 20-25 minutes until the center is set. Chill completely before slicing.
