Ingredients
- 1 large collard green leaf, stem carefully shaved down to lie flat
- 4 oz shredded cooked chicken breast
- 1/4 avocado, mashed
- 1 tbsp diced red onion & 1 tsp mustard
Instructions
- 1Wash the collard leaf and pat dry. Shave down the thick part of the stem with a knife so it can roll easily.
- 2Spread the mashed avocado and mustard on the leaf. Add the chicken and onion.
- 3Roll up tightly like a burrito, tucking the ends in.
